Live beers are still refermenting in bottle. What’s special?

Firstly, other than producing carbon dioxide and alcohol during fermentation,  yeast culture also creates flavour and aroma compounds, allowing more nuanced taste that evolve over time in bottle. Secondly, the beer is naturally carbonated, resulting in finer and more lively perlage.  Thirdly, yeast are oxygen scavengers, thus preventing oxidation and prolonging shelf life.

Temperature zones and pressure controlled draft system ensures our beers are always served at the temperatures and carbonation levels as the brewer has intended.
